Mint Simple Syrup

This fresh mint simple syrup is perfect for your spring and summer cocktails like the mint julep or mojito. It will keep for a week in the fridge.


  • 1 cup sugar
  • 1 cup water
  • 1 bunch fresh mint


  • Give the mint a rough chop or tear (I clap the mint between my hands and then just break it into sections, no knife needed) and add to the sauce pan with water and sugar.
  • Bring the liquid to a boil to dissolve the sugar, stirring.
  • Turn the heat off and allow the liquid to cool fully.
  • Strain out the mint and reserve the syrup.


  • If you want to do this using an electric kettle, just boil the water and then mix everything in a temperature safe bowl, stirring until the sugar dissolves.
